Ingredients
1/2 lb snow peas (or pick 1 quart)
1-2 sprig fresh mint
1 small red onion (or spring onion)
1 tablespoon organic olive oil (unrefined and unfiltered)
pinch of coarse sea salt
Directions
Remove stems, rinse and lightly steam peas until they are just tender but still bright green
Rinse under cold water to stop cooking, drain and put aside
Finely chop mint and onion and add to peas
Drizzle about 1 tablespoon olive oil over peas and sprinkle with a few grains of sea salt
Serve immediately
