Snow Pea Appetizer

  • 1/2 lb snow peas (or pick 1 quart)

  • 1-2 sprig fresh mint

  • 1 small red onion (or spring onion)

  • 1 tablespoon organic olive oil (unrefined and unfiltered)

  • pinch of coarse sea salt


  • Remove stems, rinse and lightly steam peas until they are just tender but still bright green

  • Rinse under cold water to stop cooking, drain and put aside

  • Finely chop mint and onion and add to peas

  • Drizzle about 1 tablespoon olive oil over peas and sprinkle with a few grains of sea salt

  • Serve immediately
