Ingredients
1 large onion (diced)
2 medium carrots (diced)
2 stalks celery (diced)
2 tablespoons organic extra virgin olive oil
1 cup broth (chicken stock or vegetable base)
2-3 cups water
1 cup dried split peas (sorted, rinsed and drained)
1 bay leaf
salt and pepper (to taste)
Note
This is so easy, so good and so nutritious, we can’t think of a good reason not to make this on a regular basis. So we do.
Directions
Saute vegetables in olive oil for five minutes or until tender
Add broth, two cups water, peas
Cover and cook for 1 1/2 hours, stirring occasionally
Add additional water as needed
Season with salt and pepper
