Red Lentil Soup

Ingredients

  • 2 medium onions (chopped)

  • 9 oz red lentils

  • 1 bay leaf

  • 1 tablespoon turmeric

  • 5 cups water

  • 3 cloves garlic

  • 2 tablespoons lemon (juice 1/2 lemon)

  • organic extra virgin olive oil (as needed)


Directions

  • Saute onions in a little olive oil

  • Add lentils, bay leaf, turmeric and water

  • Simmer, covered for 15 minutes until lentils are soft and golden-colored

  • Crush garlic and add to soup

  • Discard bay leaf and puree

  • Stir in lemon juice

  • Season to taste
