Ingredients
2 medium onions (chopped)
9 oz red lentils
1 bay leaf
1 tablespoon turmeric
5 cups water
3 cloves garlic
2 tablespoons lemon (juice 1/2 lemon)
organic extra virgin olive oil (as needed)
Directions
Saute onions in a little olive oil
Add lentils, bay leaf, turmeric and water
Simmer, covered for 15 minutes until lentils are soft and golden-colored
Crush garlic and add to soup
Discard bay leaf and puree
Stir in lemon juice
Season to taste
