3 cups cooked chickpeas (if using canned, rinse and drain well)
2-3 cloves garlic (crushed)
1/2 cup water
1/4 cup tahini (sesame seed paste)
juice from 1/2 lemon
1/4 cup good quality extra virgin olive oil
salt and pepper to taste
Place beans and garlic in a food processor
Pulse five times or until chopped
Add remaining ingredients
Pulse until smooth, scraping down sides as needed
Dip raw vegetables or use as a spread on bread with sprouts or roasted vegetables
You can cut a sweet pepper in half crosswise, and place one half (cut side down) into the middle of the hummus. Cut the other half into strips and stick them in the hummus all around the "octopus".
You can also add in the processor a slice or two of roasted red pepper for a little more flavor!
