Ingredients

1 pound tofu, cut into 1/2 inch cubes
water
1/4 cup peanuts
8 scallions, cut into small pieces, using a little of the green tops
Sauce
2 teaspoons finely chopped ginger root, peeled
2 cups water
1/4 cup soy sauce
1/4 cup kudzu root
Directions
Boil tofu in water to cover for 10 minutes. Drain and set aside.
Make sauce, first dissolving kudzu in cold water, then adding other ingredients and bring to boil, stirring frequently until it turns brown and translucent.
Add the tofu, peanuts and scallions and cook for another 3-4- minutes.
Serve over rice or soba noodles.
