Tofu with Peanuts
1 pound tofu, cut into 1/2 inch cubes
1/4 cup peanuts
8 scallions, cut into small pieces, using a little of the green tops
2 teaspoons finely chopped ginger root, peeled
2 cups water
1/4 cup soy sauce
1/4 cup kudzu root
Boil tofu in water for 10 minutes, drain and set aside.
Place all sauce ingredients in sauce pan and stir to dissolve kudzu in the cold water.
Then cook sauce over low heat until thickened, stirring often. (Note: sauce will turn from light brown to dark brown as it thickens)
Add peanuts, tofu and scallions.
Serve over rice or buckwheat noodles. A salad or green vegetable is a good accompaniment.
