Tofu with Peanuts


  • 1 pound tofu, cut into 1/2 inch cubes

  • water

  • 1/4 cup peanuts

  • 8 scallions, cut into small pieces, using a little of the green tops


  • 2 teaspoons finely chopped ginger root, peeled

  • 2 cups water

  • 1/4 cup soy sauce

  • 1/4 cup kudzu root


  • Boil tofu in water for 10 minutes, drain and set aside.

  • Place all sauce ingredients in sauce pan and stir to dissolve kudzu in the cold water.

  • Then cook sauce over low heat until thickened, stirring often. (Note: sauce will turn from light brown to dark brown as it thickens)

  • Add peanuts, tofu and scallions.

  • Serve over rice or buckwheat noodles. A salad or green vegetable is a good accompaniment.
