Tofu with Peanuts

Ingredients

  • 1 pound tofu, cut into 1/2 inch cubes

  • water

  • 1/4 cup peanuts

  • 8 scallions, cut into small pieces, using a little of the green tops

Sauce

  • 2 teaspoons finely chopped ginger root, peeled

  • 2 cups water

  • 1/4 cup soy sauce

  • 1/4 cup kudzu root

Directions

  • Boil tofu in water to cover for 10 minutes. Drain and set aside.

  • Make sauce, first dissolving kudzu in cold water, then adding other ingredients and bring to boil, stirring frequently until it turns brown and translucent.

  • Add the tofu, peanuts and scallions and cook for another 3-4- minutes.

  • Serve over rice or soba noodles.
