Easy Gazpacho

Ingredients

  • 3 large tomatoes

  • 1 medium cucumber

  • 1 sweet pepper

  • 1 small onion

  • 2 cloves garlic

  • 2 handfuls fresh basil leaves

  • 2 handfuls fresh parsley

  • 3 tablespoons olive oil

  • 1 cup tomato juice

  • salt and pepper to taste

Note

Eating locally grown organic vegetables in season is the starting point for a healthy diet, and this delicious cold vegetable soup is like eating a garden in every spoonful!


Directions

  • Using all organic ingredients, combine in a food processor

  • Pulse until you have desired consistency

  • Chill

  • Serve plain or with a dollop of plain yogurt and snipped chives
