Easy Buckwheat Noodles

Ingredients

  • 1 packet buckwheat noodles (9oz)

  • 1 bunch scallions

  • 1" ginger root (peeled and grated)

  • 2 garlic cloves (crushed)

  • 2 tablespoons tamari sauce

  • 1 tablespoon toasted sesame oil

  • 1 tablespoon honey

  • 1 pinch hot pepper flakes

Optional

  • 2 tablespoons peanut butter (smooth or chunky, optional, but good for added protein)

Note

We also serve with roasted carrots or sweet potato. Kids love this.


Directions

  • Boil noodles in water according to the package or just until tender Don’t overcook!!

  • Drain

  • Whisk the rest of the ingredients together, except the scallions

  • Pour sauce over noodles, top with finely chopped scallions

  • Serve with green salad
