Vegetarian Chili

Ingredients

  • 1 large onion

  • 1 large bell pepper

  • 4 cloves garlic (crushed)

  • 1 teaspoon olive oil

  • 1 pinch hot pepper flakes

  • 1 teaspoon ground coriander

  • 2 cups kidney beans (home cooked, or add one 15oz tetrapak box)

  • 2 cups lentils (home cooked, or add one 15oz tetrapak box)

  • 2 large tomatoes, chopped (or one 26 oz. tetrapak box of diced or whole tomatoes)

  • 1 pinch salt and pepper (to taste)

Directions

  • Chop and saute onion, pepper and garlic in olive oil

  • Add hot pepper flakes to taste and coriander

  • Add kidney beans, lentils

  • Add tomatoes

  • Add salt and pepper to taste

  • Simmer for 15-20 minutes

  • Serve with cilantro and grating of pecorino romano (optional). Delicious!
