Indian Vegetable Dinner with White Basmati Rice

Ingredients

  • 2 medium potatoes (cut into small chunks and boiled until just barely soft1)

  • 1 medium onion (chopped)

  • 1/2 green pepper (chopped)

  • 2 tablespoons olive oil

  • large handful fresh green beans (Alternately: 1 cup frozen peas or 1 1/2 cups cauliflowerettes)

  • 3 tablespoons tomato paste (Alternately: 1 cup chopped tomatoes)

  • 2 tablespoons garam masala (buy spice mixture or use recipe below)

  • 1/2 cup water

  • salt

  • pepper

Masala

  • 1 tablespoon cumin

  • 1 1/2 teaspoons coriander

  • 1 1/2 teaspoons cardamom

  • 1 1/2 teaspoons black pepper

  • 1 tablespoon cinnamon

  • 1/2 tablespoon cloves

  • 1/2 teaspoon nutmeg

Note

Soak and rinse the rice several times before measuring the right amount of water and cooking.


Directions

  • Cook rice according to directions on package

  • Saute onion and green pepper in olive oil in large skillet

  • When soft, add garam masala and cook just a bit more to bring out aroma of spices

  • Add water and tomato paste and cook until paste is dissolved in water

  • Turn heat to low and add vegetables

  • Add more water if needed

  • Season with salt and pepper when vegetables are soft

  • Serve with rice

  • A dollop of plain yogurt can be added before serving
