Ingredients
2 medium potatoes (cut into small chunks and boiled until just barely soft1)
1 medium onion (chopped)
1/2 green pepper (chopped)
2 tablespoons olive oil
large handful fresh green beans (Alternately: 1 cup frozen peas or 1 1/2 cups cauliflowerettes)
3 tablespoons tomato paste (Alternately: 1 cup chopped tomatoes)
2 tablespoons garam masala (buy spice mixture or use recipe below)
1/2 cup water
salt
pepper
Masala
1 tablespoon cumin
1 1/2 teaspoons coriander
1 1/2 teaspoons cardamom
1 1/2 teaspoons black pepper
1 tablespoon cinnamon
1/2 tablespoon cloves
1/2 teaspoon nutmeg
Note
Soak and rinse the rice several times before measuring the right amount of water and cooking.
Directions
Cook rice according to directions on package
Saute onion and green pepper in olive oil in large skillet
When soft, add garam masala and cook just a bit more to bring out aroma of spices
Add water and tomato paste and cook until paste is dissolved in water
Turn heat to low and add vegetables
Add more water if needed
Season with salt and pepper when vegetables are soft
Serve with rice
A dollop of plain yogurt can be added before serving
