Ingredients
1 cup einkorn or spelt flour
1 cup unbleached white flour with germ
1/4 cup freshly ground flaxseed
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1/2 cup date sugar or maple granules (or combination)
2-3 large eggs
4 ripe bananas
1 cup chopped walnuts
Directions
Preheat oven to 350º
Mix dry ingredients well
Put all wet ingredients into a blender and blend until smooth
Add chopped walnuts
Pour into one buttered and floured loaf pan
Bake approximately one hour
Check center with a stick until it comes out clean
Use it for breakfast or snack, toasted or not!
