Simple, Reliable Split Pea Soup


  • 1 Large onion (diced)
  • 2 Medium carrots (diced)
  • 2 stalks celery (diced)
  • 2 tablespoons organic extra virgin olive oil
  • 1 cup broth (chicken stock or vegetable base)
  • 2-3 cups water
  • 1 cup dried split peas (sorted, rinsed and drained)
  • 1 bay leaf
  • salt and pepper (to taste)


This is so easy, so good and so nutritious we can’t think of a good reason not to make this on a regular basis. So we do.


Saute vegetables in olive oil for five minutes or until tender.
Add broth, two cups water, peas.
Cover and cook for 1 1/2 hours, stirring occasionally. Add additional water as needed.
Season with salt and pepper.
