Easy Gazpacho


  • 3 Large tomatoes
  • 1 Medium cucumber
  • 1 sweet pepper
  • 1 Small onion
  • 2 cloves garlic
  • 2 handfuls basil leaves (about 2 stems, optional)
  • 2 handfuls parsley (about 2 stems, optional)
  • 3 tablespoons olive oil
  • 1 cup tomato juice
  • 1 pinch salt and pepper (to taste)


Eating locally grown organic vegetables in season is the starting point for a healthy diet, and this delicious cold vegetable soup is like eating a garden in every spoonful! Using all organic ingredients, combine in a food processor:


Pulse until you have desired consistency. Chill. Serve plain or with a dollop of plain yogurt and snipped chives.
