Easy Buckwheat Noodles

Ingredients

  • 1 packet buckwheat noodles (9oz)
  • 1 bunch scallions
  • 1 " ginger root (peeled and grated)
  • 2 garlic cloves (crushed)
  • 2 tablespoons tamari sauce
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon honey
  • 1 pinch hot pepper flakes

Optional

  • 2 tablespoons peanut butter (smooth or chunky, optional, but good for added protein)

Note

We also serve with roasted carrots or sweet potato. Kids love this.

Directions

Boil noodles in water according to the package or just until tender. Don’t
overcook!!
Drain.
Whisk the rest of the ingredients together, except the
scallions.
Pour sauce over noodles, top with finely chopped scallions.
Serve with green salad.
